Citrus australasica, the Australian finger lime or caviar lime, is a thorny understorey shrub or small tree of lowland subtropical rainforest and rainforest in the coastal border region of Queensland and New South Wales, Australia. It has edible fruits which are under development as a commercially sold crop. With its refreshing citrus flavour, fresh finger lime fruit and freeze-dried powder is ideal for use in dressings, aioli, savoury and sweet sauces, marmalades and jams. The lime complements seafood dishes and works particularly well with freshly shucked oysters and as a substitute for lemongrass in many Asian dishes.
Growing Conditions
Provide 6 or more hours of direct sunlight per day. Finger Limes are an understory plant in Australia and can thrive under filtered light conditions. They also perform well in full sun.
Australian Finger Lime Semi-Dwarf Citrus trees can grow up to 10’-15’ when planted in the ground, but are easily kept smaller if grown in a container or with judicious pruning.
